The middle layer of triply is a heat conducting layer which is sandwiched between food grade SS 304 surgical stainless steel and induction friendly magnetic stainless steel. The product is sturdy and of good quality but it has many flaws in its design making it a little inconvenient to use. The handles of the kadai and the lid have no padding and it become very hot to touch just in a few minutesThe shape of the kadai and its handles is very odd, its very broad occupying a lot of space at the burnerThe lid has sharp edges and hence one has to be careful while cleaning it and handling it. If these small design issues were taken care of this kadai would have been perfect to use else its not value for money considering the price a customer is paying for it

Bought this few days back for my parents as they were looking for some good material kadhai to cook food which is least reactive as they have lost interest in utensils which are non-stick.Bought 28 cm size which is good for 2-4 ppl<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<Here are some key points which they observed while using it->>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>1) Its basically Aluminum but with stainless steel infusion ( either coated or mixed with,seller didn't make that clear )2) Look wise its good and heavy weight.3) Kadhai has two handles on both sides with little insulating material under the handles,but have to use cloth to hold it for support as it gets hot while cooking. It comes with similar material lid with handle ( while cooking with lid on, It also gets hot though )4) Its compatible with induction too.5) Cooks uniformly due to its heavy base.6) Its has spill proof edges while pouring the gravy out of it.7) Its dishwasher safe too.8) Using it on low and medium flame to cook as on high flame sometimes food sticks to the surface. (Also food cooked on low flame is always considered better )9) Comes with 3 Years Manufacturer Warranty10) The price is on higher side but considering the benefits of Stainless steel over non-stick its worth buying.My parents are quite happy with the purchase and wiling to buy a similar one with lesser size.

Considering the fact that it's steel I would definitely recommend it. I have tried all types of food - fries, wet gravy, poha etc. and it has come out well for all.This size(26cm) is good for a family of 6-8 adults. However it suits a small family of 4-5 as well since it heats up evenly and canbe used for cooking small portion of the food in the similar time.Cooking on low flame is the key here. We know the nutrients are retained in low flame cooking and the fuel/enery also will be saved. Interestingly it still takes the same time as cooking on other materials over relatively higher flame.Don't give a second thought. Also not to confuse with other competing brands. Stahl is heavier then bergner or vinod.

Nice and very easy to clean in dishwasher. The one star less because the lid handle become hot amd one can not touch the kadhayee lid while cooking. Request design team to redesign the lid handle as it is of no use currently.
